I'm wondering if a throttle body from a V6 Probe would fit a stock GS?

Yup, should.

It will, but only if you also switch to a straight neck manifold. It won't work on a MX3 or Millenia manifold because the IAC on the bottom of the throttle body will hit a coolant fitting.

If you use a Probe or MX6 manifold with a Probe or MX6 throttle body, it should clear fine. If you stick a Millenia or MX3 throttle body on the Probe or MX6 intake manifold, then it'd hit again. I've tried both odd combinations, and neither worked. It has to be the right TB for the IM.

I've got a Probe Gt throttle body on, I've also got the DE IM on too.

what gains would one see to have a pgt im and tb?? if any?
