Besides 205/40/17, can a gs with stock struts fit thicker tires like 215/45/17 or 215/40/17?
thanks

215 40 17 is a good size and will fit. Stock or aftermarket struts wont matter, they are the same distance lol unless your rim has a different offset.

204/40/17 = 23.45" wheel diameter
215/45/17 = 24.61" wheel diameter
215/40/17 = 23.77" wheel diameter

In general, if you want to increase tire width, you must decrease profile ratio to maintain the same overall wheel diameter. The stock tire size for a K8 is 205/55/15 which makes for a stock wheel diameter of 23.88" and that is the size that your speedo is geared to. If you reduce the overall wheel diameter, each revolution of the differential will result in less distance traveled on the road and your speedo will read high.

If you want your speedo to be correct, go with 215/40/17. It will have an effect, but it will be small. Stock offset is 45mm...so watch your backspacing as well.

Does anyone know the max/min offset without having to use a spacer?

i'm hoping to fit 215/45/17 to my GS because 205/40 is very uncomfortable to ride on. Do i need to add spacer in order to fit in 215/45? my rim offset is around 40.

Front should be ok, but you might need 5mm spacers in the rear.

stock offset is ET45 on the GS 15 inch wheels, you should be fine with that offset.
