Your idle problem might be the idle air control valve. Any kind of electrical or engine load can cause the idle to drop and the iac valve is supposed to prevent that from getting out of hand. Some variation depending on electrical and engine load is normal, but probably should not exceed 1-200 rpms ...

Thermostat is easy enough to check. The upper radiator hose should be very hot if the thermostat is opening. Start it up and just stand there with your hand on that hose and see if it heats up.
