The seats from an Escort or Protege will bolt right up. My seats are from a 99 ZX2 S/R. They do sit up a little higher than the MX-3 seats though, probably not good if you are tall...I'm only 5'5"
You could probably make the 626 seats work. You can make pretty much any seat fit with a few mods.
You could also have your seats re-upholstered, then you could have them done in whatever type and color fabric you want...even leather.

I got my new leather seat covers from http://www.leatherseats.com They were great to work with, and I believe they were reasonably priced - Cost around $900USD for full interior, including sidepanel material (which I have yet to install) I got a 2 tone, black leather w/ pacific inserts. I was really happy with the way it came out. I had no experience before doing it, but I searched up on the internet and found some help. The shop manual also has a bit of information on it (94+ cars) which I wish I would have known when I did it. I have a 95 RS, but I believe the older seats would be easier to do...it took me 2 hours to do EACH one of my headrests...they make them sooooooo tight. I had to stretch the leather to fit nice, but they sure do look good. I can post some pictures if you're interested.
Oh, Id suggest giving them a call. They can help you out alot in determining the color scheme you want for your car. You can also request free leather samples. Best of all, they are a certified katzkin dealer! (Got the warranty info when they shipped )
This is for 3000GT's, but its a great guide:

Hope it helps,

Id love all new leather interior but what you showed with the 3000gt, id be pissed if my interior turned out like that and i paid someone for it. Leather looks like s--- when its all loose like that.
