The car is being built for drag racing, its going to be pretty
unstreetable with the engine combo being bolted together.

Currently the stock shocks are out front and rear, i would'nt
mind lowering a inch or 2 out of the car while im at it, nothing
radical at all....

Question is what spring rates and damper setting should i be
looking at?

You want very, very stiff rear shocks and springs. Probably something around 500"lb springs in the back. You'll also want the rear a bit higher than the front to get as much weight over the front wheels as possible. Stock height in the rear with a lowered front would work best. I'm thinking some ground control coilovers would meet all those requirements.

For shocks get some koni adjustables and then you can fine tune them for what works best.

or you can remove the strut & just weld a metal beam to solidify the rear suspension. Thats what the hardcore dragsters do
