messed up temp gauge help

whenever i give my car gas the temp gauge drops down like its not reading anything, but when its idle it goes up to mid point. i replaced the sending unit and the thermostat. those weren't it.it dosent matter if the wire is connected to the sending unit or not, it still does the same thing. What the hell is wrong with my car ?!?!?!
