I'm fully with you on the white thing, MrMaz - it is a little plain, and has a tendency to look dated/faded/weathered/like a rental car, unless you keep it immaculately clean, tidy, and blemish-free...
As for the other colours, I must say I'd always thought flat red would just look dated & like a normal red that's just faded... but then I do kinda have a thing against red cars as a general rule (which is exactly why both the car's I've owned to date have been dark red... ). This was until I saw Miguelitto's photos - it actually looks fantastic on his car! At least, in the pics, anyway!
I'm also a massive fan of the metallic blue, and reckon the 350z blue is amazing! The RX-8 blue (from 1st gen RX-8) is a fantastic colour, too, in case you're wanting to keep it with the whole Mazda thing. If you're finding blue a little too loud, like you say, then the metallic gun metal grey is my next fave. If I was having my car re-sprayed, it would definitely be a toss-up for me between these two colours! (And an excruciating choice at that! I'd probs have to buy a second MX just so I can have one in each colour!! Hahaha)

If you kept it as close to the original colour it would save you having to paint so much extra like door jams, engine area, truck,,er I mean hatch inners. Flashing candy red over red in the door jams is much easier than totally changing a car colour. In the end a colour is a colour and weather it's red, blue, green, it's all been done (except plaid) so save yourself a few bucks and stick with some kinda red.

Red is a magnet for attention... I hated red before I bought this car, and although it's grown on me, it's still a no-go.
I agree, it would be cheaper, but I don't mind the cost of painting it all once. I'll not be wasting my time painting beneath the carpet, behind the dash, etc. Engine bay will be painted when I swap, so that leaves every exposed area. I won't laze out with the lip and mini sides either... I've seen enough people do that. It will be clean, or it won't happen.
I'll probably die of old age before I pick a color, oh the irony...
