It's possible, but boy is it labor-intensive.

Haha, I figured it would get noticed a little quicker over here!
Technically, I can fit anything that will bolt up to a Probe/MX-6/626 and fit under a 16" wheel. These particular wheels offer more clearance than most, as MazdaSpeed6 brakes "require at minimum, a 17" wheel".
There are 3 designs of Mazda6 brakes, which is outlined here:
Disc diameter:
03-05 Mazda 6 => 11.1" => Fits no problem with a 16" wheel
06-07 Mazda 6 => 11.8" => Fits no problem with a 16" wheel
06-07 MazdaSpeed 6 => 12.6" => Must have a 17" wheel minimum
Note: The Speed6 rotors are 12.6" across, not 12.2" as mentioned on ProbeTalk.

The one and only exception to the 17" wheel rule for the Speed6 brakes is the one pictured above. Myself and a member of Mazda6Club have bolted these wheels over these brakes. As far as I know, the Mazda6 member never ran the setup, only tested the fit out of curiosity.

Thank you all, again!
WhiteFinish,
The calipers and brackets were a complete steal on Craigslist, I stumbled across them completely by accident... Finding affordable rotors was a complete nightmare, unfortunately.
I did stumble across a set of front rotors(drilled and slotted) with matching Ceramic pads that had fairly good feedback from other buyers. This pad/rotor combination(with a discount reduction) cost me almost exactly what 2 OEM quality blanks would have otherwise.
Expect to spend ~$150-200 on the calipers/brackets, $150-200 on pads/rotors, and the miscellaneous costs of wheels/5 lug conversion/bearings, etc.
In your case, you could use the Lantis parts and save a lot right off the top... I'm not sure about availability of MS6 brake parts in Europe though.
