This way should be less expensive than actually buying ground wires from a company and it is the same or better quality.

It will be less quality (for some like apex, sun auto, hks, nrg) who use low/no oxygen exposure to their copper. But... this will work fine. Please use heat shrink and make sure that there is an FT rating for the insulation so it doesn't melt.

I have some leftover wire from my amp kit... it looks to be a heavier guage than the wire that is currently on my neg battery terminal.... I think its only 8 guage.

So it would be better just 2 buy a kit
than rather make it

That is pretty hard to say. If you can take your time and make sure that your lugs won't take on moisture then make your own. If you plan on rushing it and not using the correct tools, forget it. If you will only save 10-20 bucks, I wouldn't do it. Please keep in mind that the kits out there are designed to take the heat under the hood. Amp kits may not.

I would assume you replace all the ones that are already there and then keep adding them to important parts untill you run out. Like your engine, your fuse box, starter.... I can't think of anything else really :P

You MUST replace the stock grounds. If you don't, you run the risk of having "potential difference" between your grounds and will burn up your old ones.
