Ok I have a few suggestions. First off I will always suggest less subs over more.
When purchasing subs I can not stress this enough, always buy the best sub/subs you can possibly afford. In this case you appear to be fond of alpine and I can vouch for the SWX as being a very good sub. Me personally, I would just use 1 12" however it seems that you like the sound of 10" subs so I would do 2 10" subs. I will say that 2 10" subs would likely be only worth about a 1.5 db gain at best over a single 12.

Now if you go the single 12 route you would need a 1000 watt rms @ 2 ohm amplifier. If you went the 2 10" route you would need a 2000 watt rms amplifier @ 4 or 1 ohm depending on the way you wired it or 2 seperate amps. As you can see the single 12" is the less costly route.
As far as amps I can suggest possibly a kicker zx 1500.1 , it roughly delivers around 1000-1200 rms watts @ 2 ohms at 12 volts and a peak of 1500 watts @ 2 ohms with 14.4v . If your worried about damaging the sub you could always use a 1000.1 but trust me as i do know what kickers amps really deliver to the sub and the 1500.1 would be better.
If you still went with 2 10" subs obviously since the kickers aren't stable to 1 ohm and don't supply enough power at 4 ohms you would need 2. A 2000 watt amp at 4 ohm will be costly and a 1 ohm stable amp would deliver power at the cost of less sound quality so 2 2ohm amps would be the better choice.

As far as wiring goes I always use a 1/0 guage wiring kit although costly is well worth the investment. I prefer Tsunami kits. They can be aquired at your local circuit city.
As far as a box goes I would highly suggest you have a custom ported box built tuned specifically for the sub or subs that you will use. I personally use g-force performance enclosures, maybe you can hit him up on his site to purchase an enclosure.
