I'm having trouble finding a good spot to put the jack stands when supporting the mx3, where have you guys found the best place to be? I'm sure some of you have the placement down to an art ....

depends what you're doing, you can usually put them a few inches behind the wheel wells. Directly under the side view mirrors. I have lots of bent metal under my car from where I put the jackstands. Another place to put them is under the control arms if you can get it up high enough and you won't be working on the suspension or wheels.

If you are using the jack that comes with the car, then you will notice a "slot" in the top of the jack. That slot corresponds to a "ridge" that run the entire length of the body on both sides of the underside of the car (in between the tires). So you put the ridge in the slot, and just start jacking up. Really works good.

For the front, use the frame rails that run back from where the rear of your engine cradle bolts up, they are about 2 feet long, put then around 3" back from the front. They are located 2"-3" in from the rocker panel.
For the rear use the trailing arm, it won't bend. It'll let the rear wheels drop a bit if your working in that area. lower the car slowly because the trailing arm will settle slightly (slip) on the jack stand. If you're working on the suspension, use the rocker panel lip. It's strong enough to support the car, and shouldn't bend if your carefull.
