I do that and its works fine. I just eliminate that line and jumped the line with a rubber line and wala!!

DO NOT replace power steering fluid with just any old hose. PS fluid reacts with heater hose. The section replaced MUST be certified for PS fluids.

The best way to go manual steering is with a 323 Rack. (Use the search with that). You CAN just cut the lines and take off the pump, but its not the best way. The 323 Rack does have a longer lock to lock ratio though.
